Linguini with Arugula
You Will Need:
- Arugula, 5 oz
- Bacon, ¼ lb, chopped
- Asparagus, ½ lb, trimmed and cut ½ inch
- Linguini, 1 lb, cooked
- Butter, ¼ cup, melted
- Garlic, 2 tsp, chopped
- Lemon Juice, ¼ cup
Recipe Serves: 4
1. Cook pasta according to package directions. Starting in a cold pan, cook bacon over medium heat until browned and crisp. Drain on paper towels and set aside.
2. Wipe out the pan and return to the stove. Sauté the butter, garlic and asparagus for about 3 minutes over medium heat.
3. Turn off the heat and toss in pasta, lemon juice, bacon, and arugula. Garnish with parmesan cheese and serve with your favorite white wine.
