Baked Brie with Warm Fruit Compote

You Will Need:

  • Thyme, 1 ½ Tbsp, finely chopped
  • Brie, ½ lb block or wheel
  • Pear, 1 each, small chop
  • Butter, 1 Tbsp
  • Granny Smith and Gala Apples, 1 of each, peeled, small chop
  • Dried Cranberries, ¼ cup
  • Brown Sugar, ½ cup
  • Apple Juice, ¼ cup
  • Lemon Juice, 2 Tbsp
  • Salt, 1 tsp

Recipe Serves: 8 as an appetizer
Instructions:
1. In a small sauce pan, melt butter and sauté apples and pears for 3-4 minutes. Add brown sugar, ¼ cup water, salt, and apple juice and bring to a boil, then add in cranberries and thyme. Reduce heat to low and cook for 25-30 minutes or until thick and jam-like. Stir in lemon juice. Turn off stove and keep warm

2. Preheat oven to 375 degrees

3. Place brie on a foil-lined baking sheet and bake for 15-20 minutes or until soft and cheese is melting out of the rind

4. Serve warm brie with fruit compote and toasted baguette slices or crackers for a delicious and simple holiday appetizer
