Beef Tenderloin Stuffed with Herb and Cheese Filling
You Will Need:
- Basil, 1 Tbsp, chopped
- Beef Tenderloin, 4 filets, 6-8 oz each
- Cream Cheese, ½ cup
- Garlic, 1 tsp, minced
- Olive Oil, 2 tsp
Recipe Serves: 4
1. In medium bowl, mix together basil, cheese, and garlic and season with salt and pepper to taste.
2. Cut a small pocket in the top of each beef medallion making sure not to cut the steak all the way through. Fill each small cavity with one tablespoon of cheese mixture.
3. Heat olive oil in an oven proof pan over medium heat. Sear each medallion on each side about 3 minutes. To finish cooking place pan in 350°F oven. For medium rare steak cook for about 10 minutes. Serve with your favorite red wine.
