Crispy Baked Fish with Herb Tartar Sauce

You Will Need:

  • Plain Bread Crumbs, 1 cup
  • Flour, ½ cup
  • Eggs, 2 each, beaten
  • White Fish Filets, such as Halibut or Flounder 1 lb, cut into thick strips
  • Salt, 1 tsp
  • Pepper, ½ tsp
  • Plain Greek Yogurt, ¼ cup
  • Mayonnaise, ¼ cup
  • Pickle Relish, 2 Tbsp
  • Capers, 1 Tbsp
  • Dijon Mustard, 1 Tbsp
  • Infinite Herbs Seafood Blend – Dill, Cilantro, and Chives, 4 Tbsp, chopped

Recipe Serves: 4

Instructions:
1. In a small bowl combine chopped herbs, mustard, mayonnaise, yogurt, capers, and relish. Cover and chill in refrigerator for at least 30 minutes
2. Preheat the oven to 400 and spray a large baking sheet with cooking spray
3. In three separate shallow bowls, lay out the flour, beaten eggs, and breadcrumbs. Season the fish strips with salt and pepper, then, working with a few pieces at a time, dip the fish first in the flour, then in the eggs, then in the breadcrumbs, evenly coating each piece. Place the fish sticks on the greased baking sheet 1-2 inches apart and repeat with remaining fish.
4. Spray and even layer of cooking spray over all of the breaded fish pieces and bake 10-12 minutes or until cooked through.
5. Serve immediately with the chilled herb tartar sauce
