Herb-Crusted Flat Iron Steak with Cherry Tomatoes

You Will Need:
Italian Parsley, 1 cup, chopped
Rosemary, 2 Tbsp, chopped
Basil, ¼ cup, chopped
Garlic, 3 Tbsp, minced
Salt, 1 Tbsp
Flat Iron Steaks, 6 each , 6 oz
Olive Oil, ¼ cup
Cherry Tomatoes, 2 cups, halved
Olives, ½ cup, coarsely chopped
Vinegar, 2 Tbsp
Recipe Serves: 8

Instructions:
1. In a bowl combine rosemary, garlic, salt, and 3 Tbsp parsley with 2 Tbsp olive oil. Rub mixture on steaks and marinate in the refrigerator for at least 1 hour, but up to overnight.

2. In a bowl mix together tomatoes, remaining parsley, olives, basil, remaining olive oil and vinegar.

3. Over medium heat, grill steaks until preferred doneness, about 4 minutes on each side for a medium steak. Slice steaks and serve topped with tomatoes.
