Herb Focaccia Bread
You Will Need:
Rosemary, 2 Tbsp, coarsely chopped
Thyme, 2 Tbsp, chopped
Basil, 2 Tbsp, chopped
Olive Oil, ¼ cup plus 1 Tbsp
Salt, 3 Tbsp, divided
Pepper, ½ Tbsp
Water, 1 cup, warm
Dry Yeast, 2 tsp, rapid rising
Sugar, 2 Tbsp
Flour, 4 cups
Recipe Serves: 1 large loaf

Instructions:
1. In a large bowl combine the yeast, sugar, and warm water and let sit 3-4 minutes until it foams on top (this means the yeast is active)
2. Using a mixer, slowly add in flour, 1 Tbsp salt, and ¼ cup olive oil and mix until smooth dough forms
3. Knead dough for 1 minute, then place in a large bow, cover with a damp kitchen towel and set the bowl in a warm place to rise for 30-40 minutes
4. Coat a baking sheet with a small amount of oil. Roll out the dough to fit the pan, then cover with the towel and let rise another 15 minutes
5. Preheat oven to 400. Using your fingers, make small dents all over the surface of the dough, then drizzle with remaining olive oil and sprinkle on remaining salt, pepper, and chopped herbs
6. Bake 18-20 minutes and serve warm
