Herb Scented Red Onions

You Will Need:
Basil, ½ Tbsp, chopped
Thyme, ½ Tbsp, chopped
Red Onion, 4 each, cut into quarters
Plum Tomatoes, 4 each, cut into quarters
Garlic, 1 clove, minced
Chicken Stock, ¼ cup
Water, 1 cup
Olive Oil, 2 Tbsp
Recipe Serves: 12

Instructions:
1. Mix all ingredients together and place in a shallow baking dish. Season with salt and pepper if desired. Cover with foil and bake for 10-15 minutes.

2. Remove Foil and Bake for an additional 10-15 minutes

3. Serve with your favorite chicken or pork dish.
