Italian Style Couscous

You Will Need:

  • Water, 1 cup
  • Olive oil, 1 Tbs plus 2 Tbs (reserve)
  • Salt, 1/2 tsp.
  • Dry Couscous, 1 cup
  • Yellow Squash, Zucchini, Red bell pepper, 1 each, diced
  • Roma Tomatoes, 2 each, diced
  • Basil, 1/4 cup, chopped
  • Oregano, 1 Tbs, chopped
  • Lemon Juice, 2 Tbs.
  • Lemon zest, 1 tsp.

Recipe Serves: 6

Instructions:
1. Bring the water, 1T of oil and salt to a boil and pour in couscous.

2. Leave pot covered for 5 minutes with no heat.

3. In a saute pan, add the remaining oil and cook the vegetables.

4. Add vegetables, herbs, couscous, lemon zest and juice in a medium bowl and serve hot or warm.
