Instructions:1. Bring the water, 1T of oil and salt to a boil and pour in couscous.
2. Leave pot covered for 5 minutes with no heat.
3. In a saute pan, add the remaining oil and cook the vegetables.
4. Add vegetables, herbs, couscous, lemon zest and juice in a medium bowl and serve hot or warm.Recipe developed by Chef Danny Klein.
