Mint Blueberry Cobbler
You Will Need:
- Mint, 2 Tbsp, finely chopped
- Sugar, 2/3 cup
- Cornstarch, 2 Tbsp
- Water, ¾ cup
- Blueberries, 3 cups, fresh or frozen
- Cinnamon, 1 tsp, ground
- All-purpose flour, 1 cup
- Baking powder, 1 ½ tsp
- Salt, ½ tsp
- Milk, 1/3 cup
- Butter, 3 Tbsp, melted
Recipe Serves: 4
Instructions:
1. In a saucepan, combine sugar, mint and cornstarch, then slowly whisk in water. Bring mixture to a boil, stirring constantly, and allow to boil for 1 minute. Add the blueberries. Pour mixture into a lightly buttered 9-inch pie plate. Sprinkle with cinnamon melted butter.
2. Mix together flour, baking powder, and salt. In a separate bowl, combine the milk and melted butter. Add the milk mixture to the flour mixture all at once. Stir just until mixture is moistened and forms a ball. Drop by the spoonful onto the blueberries. Bake at 425° for 25 to 30 minutes, or until lightly browned.
