Peppermint Cookies
You Will Need:
- 1 c. butter
- 3/4 c. sugar
- 1/4 tsp. salt
- 3 tbsp. crushed dried peppermint leaves
- 2 c. flour
- 1 c. chocolate chips (optional)
Instructions
Grind the peppermint with the 1/4 cup of the sugar in a mortar and pestle until the mint is pulverized. Add the rest of the sugar and mix all together. (This can also be done in a food processor.)
Cream the butter. Add 1/2 cup of the peppermint sugar. Let the mixture “rest” for 10 minutes or so, in order that the butter can absorb the mint oils. Then add the salt and the flour. Add chocolate chips (if used) and mix thoroughly. Chill the dough.
Form the chilled dough into 1 inch balls. Roll each one in peppermint sugar and put on a baking sheet. Bake at 350 degrees for 20 to 25 minutes, or until the edges are brown. Makes about 3 dozen cookies.
