You Will Need:

  • Thyme, 1 Tbsp, finely chopped
  • Parsley, 2 Tbsp, chopped
  • Fat Free Milk, 2 cups
  • Butter, 2 Tbsp
  • Flour, 2 Tbsp
  • Yukon Gold Potatoes, 2 lbs, pealed and thinly sliced
  • Granny Smith Apples, 1 lb, peeled and thinly sliced
  • Onion, 1 cup, thinly sliced
  • Gruyere Cheese, 1 cup, grated
  • Cheddar Cheese, ½ cup, grated
  • Salt and Pepper, 2 tsp of each

Recipe Serves: 8
Instructions:
1. Preheat oven to 375
2. In a saucepan melt butter and add in flour. Cook for 1-2 minutes, then slowly whisk in warmed milk. Bring mixture to a boil to thicken, then stir in chopped thyme, parsley, ½ cup cheddar and ½ cup gruyere cheese. Season with salt and pepper
3. In a greased baking dish, layer ½ the sliced potatoes, ½ the sliced apples, and all of the onions. Pour over ½ the cheese sauce, then sprinkle on ½ remaining grated cheese
4. Top this with remaining slices of potatoes and apples, then pour over remaining sauce and top with remaining grated cheese.
5. Cover with foil and bake for 50 minutes, then uncover and continue baking 20 minutes or until golden brown. Let stand 10 minutes before serving
