Roasted Pumpkin

You Will Need:
Oregano, 2 Tbsp, chopped
Thyme, 2 Tbsp, chopped
Garlic, 2 Tbsp, chopped
Pumpkin, 3 lbs, peeled and cut to1 inch cubes
Olive Oil, 3 tablespoons
Salt, 1 Tbsp
Black Pepper, 1 tsp
Recipe Serves: 8
Instructions:
1. Preheat oven to 350°F. In a large mixing bowl combine all of the ingredients.
2. Pour pumpkin onto baking pan and cover with aluminum foil. Bake for 25 minutes.
3. Remove foil and bake for about 10 more minutes until golden brown and fork tender. This is great healthy Thanksgiving side dish.
