Roasted Zucchini and Tomatoes

You Will Need:
Basil, 1 ½ Tbsp, chopped
Rosemary, 1 Tbsp, chopped
Parsley, 1 ½ Tbsp, chopped
Salt, 1 tsp
Pepper, 1 tsp
Zucchini, 1 lb, cut into bite-size pieces
Olive Oil, 1 Tbsp
Cherry Tomatoes, 1 pint
Recipe Serves: 4-6
Instructions:
1. Preheat oven to 350
2. In a medium bowl, combine cherry tomatoes, chopped zucchini, olive oil, salt, pepper, and rosemary
3. Spread out on a large baking sheet and roast in the oven for 10-12 minutes, or until tomatoes start to burst
4. Transfer to a serving dish and toss with chopped basil and parsley. Serve warm or at room temperature
