Sauteed Baby Bok Choy
You Will Need:
Olive Oil, 2 Tbs.
Red Onion, 1 medium, julienned
Red and Yellow Bell Pepper, 1 each, seeded and julienned
Green Beans, 1 Cup, chopped
Mushrooms, 2 cups, cleaned, sliced
Baby Bok Choy, 3 heads, chopped into ½ inch pieces
Garlic, 2 cloves, minced
Soy Sauce, 2 Tbs.
Black Pepper, to taste
Recipe Serves: 4

Instructions:
1. In a large pan, heat the oil over medium-high heat and saute the onions for about 5 minutes till translucent, before adding the peppers.
2. Saute for about 3 minutes, then add in the beans, mushrooms and repeat cooking for aother 3 minutes.
3. Toss in the remaining ingredients and cook until the baby bok choy is beginning to wilt.
4. Season with pepper (the soy sauce provides salt) and serve hot.
