Sorrel and Goat Cheese Frittata with Crispy Ham
You Will Need:
- Sorrel leaves, 2 cups, chopped
- Scallions, 1 Tbsp, thinly sliced
- Eggs, 6 each, beaten
- Butter, 1 tsp
- Thick-cut Ham, ½ cup, chopped
- Goat Cheese, ½ cup
- Salt, 1 tsp
- Pepper, 1 tsp
Recipe Serves: 6
Instructions:
1. Preheat oven to 450.
2. In a medium bowl whisk together eggs, goat cheese, salt, and pepper.
3. Over medium heat, melt butter in a large non-stick, oven-safe sauté pan.
4. Add ham, scallions, and sorrel leaves to pan and cook for 3-4 minutes, or until ham is crisp and the sorrel is wilted.
5. Add egg mixture to the pan and cook for 3-4 minutes, stirring with a rubber spatula as you would with scrambled eggs, until the bottom has set.
6. Smooth out the top and transfer the pan to the oven. Bake for 4-5 minutes longer until firm on top. Serve hot from the oven cut into wedges.
